Quick and crispy pizza

Med commented that he loves thin crusted pizza and hey, I think most of us would be. I think it tastes so much better than the deep pan variety, which was just a whole lot of bread base. Or at least that’s how it feels to me.

One trick that my cousin and I discovered during our undergraduate years that gives us crispy pizza without too much work and one that can be prepared easily and quickly after a full day of classes is to use puff pastry base. Here’s how…

Ingredients:

  • 1 sheet ready made puff pastry
  • Some tomato purée
  • Pizza toppings as preferred

Yup, that’s all you need.

Preheat the oven to the temperature as indicated on the puff pastry’s wrapper. Roll the pastry flat and spread with tomato purée. Don’t overdo it or it will end up soggy. Then spread the toppings over and bake for approximately 15-20 minutes, when the pastry is golden and puffy. Serve immediately.
