Pizza Omelette

Yet another simple and quick recipe, using mostly ingredients that you can improvise depending on what’s there in your fridge/ pantry. Best of all it takes about, well, 10 minutes to cook and at the same time can be nutritious (again, dependent on what you use).

This recipe serves two.

Ingredients:

  • 4 eggs, beaten
  • 1 tbsp of fresh herbs (e.g. oregano, basil) or 1 tsp of dried herbs
  • olive oil
  • 2 tbsp of tomato paste sauce (from a jar is fine)
  • some grated cheese
  • toppings such as olives, salami, ham, pineapple pieces etc

Firstly heat the grill to high. Beat the eggs and herbs together, with some salt and pepper if wished. Add just a tad of water if you want (about 1 tsbp) because it helps to make the omelette a little fluffier. Heat oil in ovenproof frying pan and tip the eggs in. Cook over low heat until set. Place under the grill until set and puffed up. Now make a pizza by spreading the sauce, scattered with cheese and toppings of choice. Grill again until cheese melts and serve with salads.

    oooo pizza….another one of my most fav food….i love mine with lots and lots of cheese and olives…thin crust too πŸ˜‰ yummy

    i made a few with Em for x’mas eve..one was with mozarella balls and bacon stripss…..super yummy!!!
